Monoglyceride (MG) is the full name of monoglyceride (or monoglyceride of glycerol), which has two configurations, namely 1-MG and 2-MG. Applications
Glyceryl monostearate is a common emulsifier widely used in food, medicine, cosmetics, and detergent industries. Due to the interaction between monoglycerides and oils, it can promote the formation of its crystal form, improve the ductility, esterification and water absorption of plastic oils, and prevent splashing during heating. It has been used in the production of margarine, shortening, mayonnaise, seasonings and other special oils. The interaction between glyceryl monostearate and gluten protein can form a symmetrical complex of protein-lipid-protein and starch-lipid-protein, thereby enhancing the gluten quality. At the same time, it is also the mother of Chemicalbook series emulsifiers such as lactic acid monoglyceride, citric acid monoglyceride, sulphuric acid monoglyceride, diethyl tartaric acid monoglyceride; the addition of monoglyceride can improve the flavor and functionality of food. At the same time, it has many other application properties. In polyethylene processing, monoglyceride is used as an internal lubricant to promote smooth gelation and improve fluidity. Monoglyceride is used as an antistatic agent in polyolefins to leak static electricity on the plastic surface, avoid electric shocks in products, prevent dust from absorbing and becoming dirty on the surface, and reduce frictional electrification on the surface. Monoglyceride is used as an antifogging agent in plastics to eliminate fogging in agricultural films that affects sunlight transmittance and dripping that causes poor crop growth. It can also eliminate fogging and blurring in food packaging films, improving the appearance and commodity value of the contents.
